Before that, he got Asia Pastry Cup two times. Niklesh Sharma, the founder of the Academy and the Asia Pastry Forum, thinks that Wei Loon Tan is very talented and expert in visual designing.

Chocolate Sponge Recipe
Basically, Sponge Cake is made with three ingredients – eggs, sugar and flour. Believe me, you will need nothing more. As a beginner, you may need some patience and effort for it. Because for the sponge cake you need to make egg whipped in proper consistency. Else your sponge cake won’t rise and look no good. Also, it can deflate instantly after just removing it from the oven. So what can you do?

Let’s start the baking a Chocolate Sponge Cake:
To make a Chocolate Sponge you will need some useful ingredients like Egg Yolk, Sugar, T55 Flour, Cocoa Powder, Fresh Butter, Egg white & Sugar.

Now follow these steps
Step 1: Firstly you need to make a sabayon with egg yolks and sugar. For this mix the egg yolks and sugar together. Now whisk it for 15 mins
Step 2: Now make a meringue with egg whites mixing with the sugar.
Step 3: Here you will need to fold sabayon and meringue together. Then slowly fold it in sifted dry ingredients.
Step 4: Take half of the butter to make melted butter. Then fold in completely.
Step 5: Finally spread it and bake it at 170°C for 15 minutes.
After the baking step 5, you will get your Chocolate Sponge in your hand.
